From what we can can obtain from Subaru NZ and various website's we have googled the difference between the two is about 15%. Expect fuel consumption to be approx 10.5L /100 km on the open road for a 3.0 and 9 L /100 km for a 2.5 engine. I believe the 3.0 is a better buy unless you are truly concerned about fuel consumption. The 3.0 offers about 60 kw more power than a 2.5 . A 2.5 will start to struggle fully laden with snow boards and kids where a 3.0 will still be pulling. The 3.0 has a 5 speed tiptronic transmission where the 2.5 only has 4 speed auto. The 3.0 most importantly has a timing chain not a belt. This will save you about $200 a year in servicing costs over a 6 year period somewhat compensating for the higher fuel cost. Other differences are multi function steering wheel, 17" inch wheels all standard on the 3.0. The Ltd 3.0 also has cruise control and leather.
A 2.5 costs about 10% less than a 3.0 as a rule as a used vehicle.
So for about an extra $20 every time you gas up the I think the 3.0 beats the 2.5 hands down.
